Damper Recipe

An Aussie bread that has become known around the world is the Damper. Originally a bread made using the simplest of ingredients, damper has evolved to be a more gourmet bread while still maintaining simplicity.

Here is a modern damper recipe:


3 cups flour, self-raising
1/4 teaspoon salt
6 fl oz milk
1 teaspoon sugar
1/3 cup butter
extra flour if required


1. Mix flour, salt and sugar in a mixing bowl
2. Mix butter into the dry ingredients with your hands
3. Add milk slowly, mix to a soft dough
4. Knead on a floured board. Place rounded dough ball into a floured cake pan. Score with a knife the top
5. Bake in a preheated oven at 375° F for 30 – 40 minutes.

After baking turn out onto a cooling rack for 15 minutes before slicing.

Eat with butter, syrup, honey, jelly etc.
