An Aussie bread that has become known around the world is the Damper. Originally a bread made using the simplest of ingredients, damper has evolved to be a more gourmet bread while still maintaining simplicity.
Here is a modern damper recipe:
|3 cups flour, self-raising|
|1/4 teaspoon salt|
|6 fl oz milk|
|1 teaspoon sugar|
|1/3 cup butter|
|extra flour if required|
|1.||Mix flour, salt and sugar in a mixing bowl|
|2.||Mix butter into the dry ingredients with your hands|
|3.||Add milk slowly, mix to a soft dough|
|4.||Knead on a floured board. Place rounded dough ball into a floured cake pan. Score with a knife the top|
|5.||Bake in a preheated oven at 375° F for 30 – 40 minutes.|
After baking turn out onto a cooling rack for 15 minutes before slicing.
Eat with butter, syrup, honey, jelly etc.
