Homemade banana cake is a great recipe to add to your baking routine. Its sweet and fruity and full of so many flavors. Banana cake is also similar to banana nut bread, banana loaf, and many more variations.
When I make homemade banana cake I am aiming to have a moist banana cake with a subtle flavor. There are many recipes around that have plenty of the right characteristics.
This is an easy banana cake that should have the family begging for more. This banana cake is certainly more cake than banana bread. It really is a different texture.
Here is one that is a favorite.
Homemade Banana Cake Recipe
2 Cup All purpose Flour
1 tsp Baking Powder
1 tsp Baking Soda
1 tsp Salt
1 1/2 Cup Sugar
3 Egg Whites
1/2 Cup butter (1 Stick)
1 Cup Mashed Bananas (the riper the better)
3 Egg yolks
2 tsp Vanilla
1/4 Cup buttermilk
1/2 Cup Chopped Pecans or Walnuts
Beat egg whites until stiff. Continue beating while adding 3 tablespoons of the sugar. Set aside. Sift flour, baking, powder, baking soda and salt. Cream butter well and gradually add rest of the sugar. Add Bananas and beat for 1 minute at medium speed. Add egg yolks one at a time. Add Vanilla. Add flour mixture and buttermilk, a little of each at a time. Add chopped nuts and fold in beaten egg whites.
Bake in 3 9 inch cake pans at 350F for about 30 minutes. Allow to cool on a rack and stack with the frosting.
1 small box of Confectioners Sugar
1 1 banana mashed
1/2 stick butter
1/2 Cup Chopped Pecans or walnuts.
Cream butter. Add sugar and banana, and pecans. If too thick add a little cream
Layer cake with Banana frosting.
